I haven’t got the patience for complex dishes. I lose interest after a certain amount of time. That’s why I like to cook excellent food that’s easy to put together. I also don’t have the skill to dissect and then reconstruct ingredients to make what some call art. And since you’re browsing these pages, I’m hoping you’re a lot like me; a person who would love to impress with your cooking, but who hasn’t got the money or time to enroll in culinary school. A person who likes to keep it simple, but tasty.
My name is Jay Gaulard and I own approximately 20 very high quality cookbooks. A few years ago, I was gifted Mary Berry’s Complete Cookbook. I was also gifted Gordon Ramsay’s Home Cooking and Gino D’Acampo’s Italian Escape. Those three are my favorites. I own cookbooks by America’s Test Kitchen, Food & Wine, Yotam Ottolenghi, Curtis Stone, and Williams Sonoma to name a few more. Back in 2015, I enrolled in America’s Test Kitchen’s online cooking school to take my somewhat amateur food skills up a notch. I think I completed my mission. The course was comprehensive and I learned a ton.
Why am I telling you this? I’d like you to know that when I cook, I mean business. I take it seriously. I read through my cookbooks nearly every day, comparing and contrasting recipes, flavors, and technique, in hopes of making my next perfect dish. I’m not sure there are many true joys in life, so when a person finds one, that person better hold on to it. For me, cooking is a joy. Another is writing about what I make and bringing it to you via these pages. It’s simple really.
